Easy Peanut Butter Oat Balls

Easy Peanut Butter Oat Balls

I was hesitant to call them “energy bites” because who needs their toddler having more energy?!

I have some picky eaters and they all love these easy peanut butter oat balls. We made them last night and my 4 year old asked me for them again as soon as she woke up.

These yummy bites are great as a breakfast food or a midday snack that the whole family gobbles up. I was even able to sneak the powerhouses chia and flax seed into them.

These came together in minutes and the kiddos enjoyed helping. Honestly, they could probably just make these themselves – it’s that easy.

We used creamy peanut butter (we love Teddie’s in this house) but I bet any nut butter would work out great.

We used honey as a sticky sweetener. I’ve also used maple syrup with success. I prefer the honey because they stick together a little better when making the balls.

Usually I’ll get about 12 medium sized balls out of this recipe, but sometimes more since I’ve been making some smaller bite-sized ones for little hands.

  • 1 T Chia Seeds
  • 1/2 Cup Ground Flax

Directions

  1. Mix all the ingredients in a bowl.
  2. Refrigerate for about 20 minutes which makes it easier to form the balls.
  3. Roll into about 12 balls.
I store these in an airtight container in the refrigerator – lasts up to a week, but mine are gone within a day or two.
  4. They can also be frozen, but they don’t last long enough here!
